MEDHU VADA ( UDDIN VADA )
Ingredients:
Urad dal- 2 cups
Oil- for deep fry
Salt- to taste
Baking Soda- a pinch
Onions- 2
Coconut- small piece
Black peppercorns- 10 gms
Chillies- 2
Ginger- an inch piece
Procedure:
Soak urad dal for 6 hours. Drain all the water and grind it into paste by adding very little water.( please note that the batter should be very tight). Mix salt in little water nearly 2spoons of water and also add a pinch of baking soda in the same water. Now pour the water into the batter and mix well. Add onions, Pepper corns, Chopped ginger, chillies and coconut and mix. Now heat the oil for deep frying. Take a plastic sheet and place the batter like a ball and spread it with hand to form vada( circle shaped with hole in the center) and remove from plastic sheet and carefully place it in oil. Deep fry the vada. Remove from oil and serve hot with coconut chutney or sambar or ginger chutney.
