TOOR DAL KITCHIDI (SPLIT PIGEON PEAS RICE)
INGREDIENTS:
Toordal - 1/2 cup
Rice - 1 cup
Choice of veggies - 1 cup
Onion- 1
Tomato-1
Salt - to taste
Mustard seeds- 1 tbsp
Jeera - 1 tbsp
Green chillies -3
Coriander - chopped
Lemon juice- 3 tbsp
Oil - 2 tbsp
PROCEDURE:
In a pressure cooker add 2 tbsp of oil and let it heat. Add mustard seeds, jeera, chopped green chillies and fry for a min. Then add onion and fry for another minute. Now add choice of veggies ( here i added carrot, beans) and tomato and cook for another minute. Now add washed rice and toordal and salt and fry for a min. Then add 3 cups of water and close the lid with whistle and cook for 4 whistles. Then remove the cooked rice from pressure cooker and garnish with coriander and lemon juice and serve.
