BOTTLE GOURD FRITTERS ( Sorakaya vadalu)

INGREDIENTS:

Bottle Gourd- 1
Rice Flour- 1 Cup
Green Chillies- 2
Ginger- 1 inch piece
Chanadal- 3 tbsp
Salt- to taste
Oil- For deep frying

PROCEDURE:
   Grate bottle gourd and add salt. Keep it aside until water comes out nearly for 15 min. Soak chanadal 1 hour before making fritters In a mixer grinder grind ginger and green chillies. Now in a bowl add grated bottle gourd, chilli paste grinded, chanadal and mix well. Add rice flour little by little and keep mixing untill the water is cleared in the bowl.For a medium size bottle gourd it take less than half cup of rice flour. The dough will be smoth. Dont make it like chapathi dough. Here the consistency of the  dough is really important. If the dough becomes hard then the fritters will be very hard to eat. Now take this dough into small balls and make them in the form of thin vada. Heat the oil for deep frying. Now carefully place these vadas in oil and deep fry till golden brown.Serve hot with onion chutney

You can make the vadas on oil paper some times it may be diffiult to make vada on hand.And if you dont like deep frying make in the form of roti with hand on wet cloth or oil paper and fry it on tawa.
