BOTTLE GOURD GRAVY CURRY ( LAUKI KA SALAN)
INGREDIENTS:
Bottle gourd- 1 small
Tomatoes- 2
Peanuts- 1/2 cup
Dry coconut pieces- 1/4 cup
Sesame seeds- 2 tbsp
Mustard seeds- 1/2 tbsp
Jeera- 1/2 tbsp
Curry leaves- few
Oil-3 tbsp
Salt- to taste
Red chilly powder- 2 tbsp
Coriander powder- 1 tbsp
Jeera powder- 1 tbsp
Onions - 2
Coriander- to garnish
Procedure:
Cut Bottle gourd into small pieces without skin. Cut tomatoes into big pieces and keep aside. In a fry pan add dry coconut, peanuts and sesame seeds and dry roast them. Now remove from pan and make it into paste.Cut onoins into small pieces. In another fry pan add oil and let it heat. Now add mustard seeds, jeera and curry leaves and let them splutter. Add onions and fry untill golden brown. Now add coriander powder, jeera powder and chilly powder and fry for a min. Add 3 tbsp water and fry for one more minute. To the fry pan now add the paste grinded and fry untill oil comes out. Add 1 cup of water and cook for a while.Now add bottle gourd slices and cook until they become soft with lid. It takes nearly 7 minutes. Add tomatoes and cook for another 2 min. Garnish with coriander and serve hot with roti or rice.
