CARROT MOONGDAL RICE
INGREDIENTS:
Carrots- 6
Moongdal- 1/2 Cup
Rice boiled- 2 Cups
Oil- 3tbsp
Mustard seeds- 1/2 tbsp
Jeera- 1/2tbsp
Urad dal- 1/2 Tbsp
Coriander- For garnishing
Salt- to taste
Lemon Juice- 2tbsp
Chilly powder- to taste
Procedure:
Grate carrots and keep aside. Cook moong dal in a cooker. Dont over cook moong dal. Now heat kadai add oil and add mustard seeds, jeera, urad dal and let it fry. Now add grated carrot and salt and cook it by placing the lid for 3 min. Then remove lid and add chilly powder and cooked moongdal and fry for 1 more minute. Now add boiled rice and mix well. Add lemon juice and switch off the stove and garnish with coriander and serve.
