CABBAGE TAMARIND RICE (CABBAGE PULIHORA)

INGREDIENTS:

Cabbage shredded- 2 cups
Tamarind pulp- 1/2 cup
Coconut grated- 1/2 cup
Green chillies- 3
Red chillies- 2
Hing- a pinch
Mustard Seeds- 1/2 tbsp
Jeera- 1/2 tbsp
Channa dal- 1/2 tbsp
Oil- 5 tbsp
Rice cooked- 2 cups
Curry leaves- few
Cashew nuts- 15 nos
Salt- to taste
Turmeric- a pinch

Procedure:

   In a kadai add 2 tbsp oil and fry cabbage untill raw smell goes off. Remove the cabbage from kadai and keep aside. Add remaining oil and make seasoning with mustard seeds, jeera, green chillies,red chillies, channa dal, curry leaves, hing and cashew. Add tamarind pulp, salt, turmeric and boil untill tamarind pulp becomes little thick. Now add fried cabbage and grated coconut and cook for few more minutes with lid on slow flame. Now add cooked rice and mix well and cook for another 2 minutes with lid so that all the rice and cabbage mix evenly and will be in even taste.Remove from pan, garnish and serve.
